Recipes - Guacamole

Ingredients:
2 ripe avocados
1 tbsp. finely chopped red onion
1 tbsp. fresh lime juice
1 medium jalapeño pepper,
seeded and chopped
1 garlic clove (pressed)
Salt to taste
Directions:* Cut avocados in half. Scoop pulp into the grinder bowl, and grind until slightly chunky. Add chopped red onion and next 4 ingredients. Cover with plastic wrap, allowing wrap to touch mixture, and let stand at room temperature 30 minutes. Serve guacamole with tortilla chips.
* Cilantro Guacamole: Grind avocado until slightly chunky, add ingredients as directed and grind for 5-6 seconds. Add 3 tbsp. chopped fresh cilantro and an additional 1 tbsp. lime juice and grind for 3 seconds. Cover mixture, and let stand at room temperature 30 minutes.
